New York is the second largest producer of maple syrup in the United States. In 2016, maple production in the State increased by 18%, breaking 2015's 70-year production record by more than 100,000 gallons. Working with industry, New York is also expanding its maple market beyond traditional syrup to products such as ice cream, BBQ sauce, fudge and kettle corn.
