New York is the second largest producer of maple syrup in the United States. In 2015, the State produced more than 601,000 gallons of maple syrup, which is a 70-year high and a 10.1% increase from 2014. Working with industry, New York is also expanding its maple market beyond traditional syrup to products such as ice cream, BBQ sauce, fudge and kettle corn.
